Parmesan Chicken
4 servings

Ingredients:
Parmesan Powder Cheese
4 Med.Size Pieces of Skinless/Boneless Chicken

Place skillet on eye of stove ,add crisco cooking oil, let the oil get hot . wet(with water) one piece of chicken at a time and sprinkle top of chicken breast with parmesan cheese and place face down in hot oil.

then sprinkle back side of all 4 pieces. let cook until a nice crispy shell forms,turn and let other side cook. please cook chicken thoughly, (prefferable to 190*)

NO CARBS AT ALL !!!!!
and VERY FEW CALORIES!!!!

Thai Grilled Beef Salad
2 servings

Ingredients:
1 beef filet mignon - (8 oz)
= (or boneless sirloin steak)
4 cups mixed salad greens
1/2 cup torn basil leaves - (packed)
3 green onions - thinly sliced
1 small Kirby cucumber - unpeeled, and
thinly sliced
1 small carrot - peeled, and
cut into matchsticks
2 tablespoons fresh lime juice
1 tablespoon canola oil
1 tablespoon Asian fish sauce
= (such as nuoc mam or nam pla)
1/2 packet sugar substitute
Hot red pepper sauce or chili oil

Grill or broil steak 4 inches from heat source about 5 minutes on each side for medium-rare. Set aside to cool.

In large bowl, combine greens, basil, green onions, cucumber and carrot. In small bowl, mix lime juice, oil, fish sauce and sugar substitute. Add pepper sauce to taste. Reserve 1 tablespoon dressing; toss remainder over greens mixture. Place greens on a platter.

Thinly slice beef, reserving juices. Arrange slices over greens. Whisk beef juices into reserved dressing and drizzle over beef.

Comments: If you have any leftover steak, you're halfway through preparing this meal, so you can skip to step 2. Asian fish sauce is an important condiment in Thai and Vietnamese cooking.

Faux Individual Pizzas
4 servings

Ingredients:
4 pre-made hamburger patties
4 teaspoons canned tomato sauce
= (lowest carb)
Italian seasoning - to taste
Garlic powder - to taste
Mozzarella cheese - to taste

Broil or grill hamburger patties.
Top each patty with 1 teaspoon of sauce.
Sprinkle with Italian seasoning and garlic powder.
Top with mozzarella cheese and heat in the microwave until cheese melts.
Large batches can be done in the oven.

Carbs:

1.5 carb grams per serving.

Low Carb Lasagna

This recipe uses zucchini instead of noodles for a low carb diet. Just make a pasta sauce as follows:

Brown 1/2 lb. ground beef with 1/2 onion, chopped, 1/2 green pepper chopped. Add a large can of crushed tomatoes and a small can of tomato sauce, 2 Tbsp. catsup, 1 tsp. Mrs. Dash, 1 tsp. lemon pepper, salt and pepper to taste. Spray a 9x11 inch casserole dish with Pam. Peel 2 small zucchini and slice lengthwise into 1/4 inch strips. Layer them with the sauce and liberally sprinkle parmesan cheese between each layer, ending with cheese on top. Cover with foil and bake in 350 degree F oven for 1 hour. Remove foil, broil for about 5 minutes.
