Christmas Breakfast Casserole
serves 4
1/2 lb pork sausage
1 med. onion chopped
4 c. diced hash brown pot (16 oz bag)
1&1/2 c. shredded monterey jack or cheddar cheese
3 beaten eggs
1 c. milk
1/4 tsp. pepper
In a large skillet cook crumbled sausage and onion. Drain. In an 8x8x2 in square baking dish layer hash brown pot. !/2 of cheese, then sausage mix then remaining cheese. In a bowl combine eggs milk & pepper poor over top. You could cook it right now or, make it christmas evee throw it in the fridge and cook it in the morning. Bake covered at 350 for 45-55 min. until a knife comes out clean. I usually make biscuit to go with.
